Sizzling Summer and Food
Safety
Summer is heating up, with weather and on the grill.
It’s the time of year for picnics and BBQs. Keep your friends and
family healthy and happy while preparing outdoor meals. Here are
a few helpful food safety tips to keep harmful bacteria under control
and prevent illness:
- At home, use the refrigerator to slowly thaw frozen meat.
Thaw meat completely before grilling for more even heat
distribution.
- Be sure to marinate all meats in the refrigerator and not
on the counter.
- If using the leftover marinade from raw meat bring it to a
boil before adding to cooked meat. Don’t mix the raw and the
cooked.
- Keep cold foods cold; transport cold foods in coolers with
frozen ice or gel packs.
- Pack perishable foods in a separate cooler from the drinks;
one that will remain cold and won’t be opened as often.
- Serve cold foods in a serving dish set on a pan or
container of ice to keep cold.
- Rinse all fruits and vegetables under running water before
serving.
- To avoid cross-contamination never serve food on an
unwashed dish or plate that previously held raw meat, poultry, eggs or
seafood.
- Keep hot foods hot; grilled meats can be kept hot until
ready to serve by moving them to the side of the grill that is not
directly over the hot coals.
- MOST IMPORTANT: Don’t let any perishable food sit longer
than 2 hours and not more than 1 hour if the temperatures are above
90oF. Discard any food that has been out for longer than these
times. “When in doubt, throw it out.”

in the News: Salmonella Outbreak & Tomatoes: The FDA
has traced the salmonella poisoning to specific types of tomatoes.
Avoid eating or handling raw red plum, raw red Roma, and raw red
round tomatoes or any food prepared with these tomatoes.
The following tomatoes have NOT been linked to the problem: raw cherry
tomatoes, grape tomatoes, and tomatoes with the vine; along with any
home grown tomatoes.
